Prepare the Mango: Peel and chop the ripe mango into small cubes. If using frozen mango, let it thaw slightly for easier blending.

Combine Ingredients: Add the chopped mango, plain full-fat yogurt, whole milk, granulated sugar, and ground cardamom (if using) to a high-speed blender.

Blend Smooth: Secure the lid and blend on high speed for 2-3 minutes until the mixture is completely smooth and creamy, with no mango chunks remaining.

Adjust Consistency & Sweetness: Taste the lassi. If it's too thick, add a splash more milk and blend briefly. If not sweet enough, add a little more sugar and blend again. Add ice cubes now if desired, and blend until crushed.

Cook's notes

For a thicker lassi, reduce the amount of milk or omit it entirely.

If using very sweet mangoes, you might need less sugar. Always taste and adjust.

Add a pinch of saffron threads soaked in a tablespoon of warm milk for an aromatic, luxurious twist.

For a vegan version, use plant-based yogurt (like coconut or almond) and plant-based milk.
