Step-by-step cooking

4-6 hours soaking

Soak the rice, urad dal, and fenugreek seeds in separate bowls with enough water for 4-6 hours. Ensure they are fully submerged.

20-30 minutes grinding

Drain the soaked urad dal and fenugreek seeds. Grind them in a wet grinder or high-speed blender with a little water until you get a very smooth, fluffy, and light batter. Transfer to a large bowl. Drain the soaked rice and grind it separately with a little water until smooth, but slightly coarse. Combine with the urad dal batter, add 1 tsp salt, and mix well with your hands.

8-12 hours fermentation

Cover the batter bowl and let it ferment in a warm place for 8-12 hours, or overnight. The batter should double in volume and become frothy with a slightly sour aroma.

While the batter ferments, boil the potatoes until tender. Peel and roughly mash them. Set aside.

For the potato masala filling: Heat 2 tbsp oil in a pan over medium heat. Add mustard seeds and cumin seeds (if using) and let them splutter. Add curry leaves, green chilies, and grated ginger. Sauté for 30 seconds until fragrant. Add chopped onion and cook until translucent, about 5-7 minutes.

Heat a non-stick tawa or cast-iron griddle over medium-high heat. Lightly grease it with oil. Pour a ladleful of dosa batter in the center and quickly spread it outwards in a circular motion with the back of the ladle to form a thin, even circle.

Drizzle a little oil or ghee around the edges of the dosa. Cook until the bottom turns golden brown and crisp, and the edges start to lift. Place a spoonful of the potato masala filling in the center of the dosa, fold it in half or roll it up, and serve immediately.
